The GFCF Guide: Because Special Diets Need Lots of Attention!

Okay, so my motivation in writing a forum topic on GFCF cooking may serve a surface purpose of "plugging" my business, but the passion is not lost in my motivation. I am a mom on a mission to help other moms (and dads) to conquer Mt. GFCF!

As an introduction topic, I would like to remark on the importance of creativity when it comes to conquering your special diet. Let's think outside the take-out box, here, people! To begin the GFCF(SF) approach,the most important thing to eliminate FIRST is not gluten, nor casein, but the learned system of daily eating that has been engrained in your mind. Clear the table, proverbially. The rules of eating as you once knew them will not apply in the GFCF world.

First off, you do not NEED bread to be happy. Honest. And if it is an indulgence that you wish to keep around, there are many GFCF alternatives, even yeast free alternatives like foccaccia bread and cornbread. (If corn is well tolerated. The breakfast police are not going to come to your home and take you away, handcuffed in your robe and slippers if you have a piece of chicken and a vegetable for breakfast instead of a pancake.

Cow's do not dispense ice cream ~ there are many other frozen, creamy delights that will satisfy your sweet tooth equally. We make all kinds of Ricecream and frozen coconut milk treats. Same concept applies to popsicles. Who says fruit is the only way to go. We freeze v-8 and now our daughter begs for a "ketchup-popsicle" almost every day!

Changing your diet can be easy if you're willing to change your perception. Hey ~ in the life we live of constantly changing to the medical, emotional, and behavioral needs that Autism presents, isn't it at least fun to know we can be a little rebellious in the kitchen!
